Sandbar - a malibu & pineapple cocktail for summer evenings
Sandbar is a cocktail made for summer evenings. Apart from sipping and imbibing the wonderful mix of flavours that go to make up great cocktails, there's nothing the head mixologist of the Cocktail Shaker Boys Andrew Seaward likes better than to dabble in a little liquid alchemy and to come up with new and interesting flavour combinations. The Sandbar featured here is the result of one summer's evening mucking about. We had been commissioned to run a 50th birthday party with cocktails at a client's home in Coventry. The lady hosting the party wanted something with Malibu in as she has a thing for Malibu apparently. Sadly no great cocktails sprung to mind, so we set about creating one. Based on the flavours of the classic Pina Colada, the Sandbar was born. To make your own refreshing Sandbar at home, all you need is the following ingredients, added to a cocktail shaker with a couple of cubes of ice; the Sandbar 1 1/2 msrs Golden Rum 1 1/2 msrs Malibu coconut liqueur 3 msrs pineapple juice Shake all 3 ingredients together with the ice in your cocktail shaker. Once the shaker feels cold, you're good to go. Pour into a Martini glass - like the one pictured here and Bob is well and truly your proverbial uncle! Enjoy, let us know how you get on.
