I've been running hands-on, four week, residential cookery courses for people who are passionate about cooking for fifteen years. My courses combine practically-based teaching of core culinary techniques and methods with tried and tested advice, tips and tricks honed in the course of 25 years of experience as a professional cook and teacher.Many of my students work or wish to work in the yachting or ski industries, and my course includes specialist advice and tips on cooking in chalets and on boats.
