"Consumers are becoming increasingly well travelled and as a result, there's a rising demand for exotic meats", said Alex Brown, Purchasing Director of 3G Food Service Seafood Solutions. "As a nation, we are becoming more adventurous when it comes to new foods and flavours, so here at 3G, we were keen to source a range of sustainable game meats that would satisfy this trend. Our new Bison and Wild Boar sausages and burgers are sure to provide diners with a unique taste experience, whilst helping caterers to attract new customers, fascinated by these amazing products." He continues: "With the summer season almost upon us, these Bison and Wild Boar burgers and sausages are certainly perfect for the barbecue, but they are far more versatile than this and can be used to create premium and innovative meals. For example, Bison can be served in similar ways to beef, with horseradish, mustard or red wine sauces as ideal accompaniments. Or for an American twist, Creole sauces or hickory smoke marinades complement the meat perfectly. For gastro- type outlets, serving Bison with garlic and butter with Cèpe, shallot, garlic and fresh parsley results in a delicious meal with tremendous textures!" The new Wild Boar burgers and sausages are made from Australian Wild Boar meat, which is light in texture and colour. The Wild Boar is leaner and denser than pork, but can be cooked in exactly the same way and is ideal when served with apple based accompaniments, or red cabbage with balsamic vinegar, mushrooms and parsnips. The Wild Boars used to makeour new sausages and burgers are 100% wild and have roamed and fed naturally all of their lives, allowing the meat to take on the characteristics of their environment. The new Bison burgers and sausages are made from North American ranched Bison (or Buffalo). Bison offers a hearty meat that is richer and sweeter than beef, but is cooked in the same way. The meat is also lower in fat and cholesterol than beef and is coarse chopped to give the burgers and sausages a lovely, grainy texture.
